BLUEBERRY BRAN MUFFINS
Preheat oven to 180 degrees C. Line 10 hole muffin tin with muffin cases.
INGREDIENTS – always use organic where possible
150g plain flour
100g wholemeal self raising flour
1 tbsp oatbran
2 tsp baking powder
1/2 tsp bicarbonate soda
Pinch of salt
50g demerara sugar
1 tbsp clear honey
1 large egg
200ml buttermilk (alternative normal milk with a splash of vinegar and let sit)
150g freah blueberries
METHOD
Mix the flours, bran, baking powder, bicarb of soda and salt together in a mixing bowl and stir in sugar. Whisk honey, egg and buttermilk together in a jug.
Pour wet ingredients into dry and stir briefly to combine. Don’t over mix – the mixture should still be a little lumpy. Fold in blueberries.
Spoon mixture into paper cases and bake in preheated oven for 20 minutes until risen and lightly brown.
Remove muffins and leave to cool in tin. Serve warm or cold.
CEREAL FRUIT CUPCAKES
INGREDIENTS – always use organic where possible
100g unsalted butter
125g clear honey
150g porridge oats
50g unsweetened crispy rice
1 tblsp sesame seeds
100g mixed dried fruit such as pears, mango, apple and cranberries chopped
50g shelled pecan nuts chopped
METHOD
Melt the butter and honey in a small saucepan over a low heat,
Mix the oats, crispy rice, sesame seeds, dried fruit and chopped nuts together in a bowl, add melted butter and honey and combine.
Spoon into 12 cake paper cases and press down well. Chill for 6 hours before serving.
SUPER SMOOTHIE
This is a recipe you can get creative with and is a great breakfast idea for kids because so much can be included (and hidden) in a delicious smoothie!
Remember to never just use fruit as it quite a sugar hit.
Add omega 3’s for brain function, skin and immune system health:
Avocado is tasteless and give a great smooth consistency to a smoothie
LSA mix (linseed, sunflower and almond ground)
Chia seeds
You can use frozen fruit such as mangoes or banana to keep your smoothie chilled while drinking.
I like to add organic or biodynamic yoghurt for gut health and baby spinach leaves for energy.
You could add some kid friendly protein powder for a more sustained feeling of fullness to keep them going till morning tea.
You can prepare your nutribullet and leave in the fridge the night before to just whizz up in the morning if you know you will be short of time!
