Caramelised Banana Oats Porridge is by far, my favourite Winter breakfast! Also great to have on the go in a mason jar :-).
PORRIDGE:
1/2 cup organic rolled oats
1 cup organic almond milk
1/2 or 1 small, ripe, mashed banana
Celtic sea salt
1/2 tsp organic cinnamon powder
1 tsp vanilla extract (optional)
1/2 tsp organic macca powder (optional)
CARAMELISED BANANA:
Organic butter / organic coconut oil (virgin)
1/2 ripe banana cut lengthways
1/2 tsp organic cinnamon powder
1 tsp organic raw honey
1 tsp organic peanut butter to serve (optional)
METHOD
- Place the oats in a small saucepan with the almond milk, mashed banana, sea salt, cinnamon and vanilla. Heat on medium-high until boiling. Reduce heat and simmer uncovered for 5-10 mins, or until almost all liquid is absorbed.
- Meanwhile melt butter or coconut oil in a small saucepan/fry pan, over medium-low heat. Sprinkle one side of the banana slice with half the cinnamon and half the honey, and place that side down in pan. Cook for 3-5 mins or until caramelised. Sprinkle the other side with remaining cinnamon and honey, and flip over, to cook for another 3-5 mins.
- Stir the macca powder onto the oats, (alternatively you could use 1/2 scoop of vanilla protein at this point). You can add some more milk if required. Serve in a bowl, and swirl through peanut butter. Top with caramelised banana and some extra cinnamon. Enjoy!
